Originally, droëwors was created as a way for South African pioneers to preserve meat without refrigeration. Ground beef (sometimes mixed with lamb) was seasoned with coriander, black pepper, vinegar, salt, and then stuffed into animal casings to air-dry in the South African heat. This simple but ingenious method kept the meat safe, portable, and full of flavor for their long treks and hunting trips.
