Long before refrigeration was invented, early Khoisan hunters learned to preserve their meat by slicing it into strips, salting it, and air-drying it under the hot African sun. When Dutch settlers arrived in the 1600s, they introduced cloves, coriander, and black pepper to the process.
The result was a powerful fusion of tradition and flavor: biltong (pronounced bill-tong).
One bite, and you’ll understand why South Africans never compare it to jerky.
Our story began in our kitchen, crafting small batches of biltong from a family recipe passed down by our Oupa (Afrikaans for grandfather). As we began to share with friends, word quickly spread, and soon we couldn’t keep up! Since then, we’ve opened our first facility with the goal of sharing Oupa’s legacy (and Biltong) with the rest of our friends across the United States.

Baya Biltong is a delicious, protein-packed snack made from our legendary family recipe, passed down for generations. We use 100% locally-sourced USDA beef and handcraft every batch in small quantities. All of our products are free from artificial preservatives and added sugar.
While both biltong and jerky are dried meat snacks, they are made using different processes. Jerky is usually cut into thin strips and dehydrated with heat, often with added sugar and preservatives. Biltong, on the other hand, is made by air-drying thicker cuts of meat in a cool environment, preserving its natural flavor and tenderness.
We use no processing, added sugar, or artificial preservatives in our biltong. Our generational recipe and traditional process (using South African dryers) results in a product that’s more tender, flavorful, and authentic than anything we’ve tasted.

To maintain freshness, we recommend storing Baya Biltong in a cool, dry place.
Once the package is opened, it should be refrigerated and consumed within 4-6 days.

Biltong is an excellent source of protein, iron, and other vitamins that are crucial for a child’s growth. However, its firm and chewy texture can be a choking hazard, so we strongly recommend cutting it into small, bite-sized pieces for younger children. Also, due to its salt content, biltong should be offered in moderation as part of a balanced diet.
